Offer USDA-Inspected 100% bison products since 1989. We also work a 500-tree sugarbush. Cherokee Bison Farms - owned & operated by Leroy & Cindy Fricke, located just east of Colby, WI at Cherokee. Leroy was born and raised on this farm. He's part and parcel with its roots, it's in his blood, feeds his soul - tied to his land and heritage as only a farmer can be. Married in 1980,there was no question that he stayed to share and take on the business with his dad on what was then a dairy farm, milking 120 head of Holstein cattle 3 times a day. Leroy and Cindy raised 3 daughters here. After a devastating barn fire in 1988, the farm transitioned into a bison farm bringing home the first bison calves in the fall of 1989. It took no time to fall in love with the animals, their history, natural healthy traits and delicious meat. With a focus on raising good healthy food, our small central Wisconsin farm is currently home to roughly 175 head of American Bison. Grassfed, no grain-finishing, the bison enjoy a rotational pasture system, sharing some of the 440 acres with crop and woodland. No growth hormones, bone- or blood-meal or antibiotics are used. We carry a full line of state-inspected bison meat products including burger, steaks, roasts, summer sausage, jerky and snack sticks ... even bison bacon and braunschweiger when available! We also raise an average of 15 acres of sunflowers annually - all non-GMO seed; no pesticide, herbicide nor commercial fertilizer used on our fields. We harvest, clean and dry the seed; then sort by quality. The seed is then cold-pressed into our amazing Cherokee Sun sunflower cooking oil. A very healthy oil, it can be used in place of olive oil; however, our sunflower oil is more versatile than olive oil, with more than double the flash point, so it can easily be used in high temp cooking (up to 450 degrees). Not only is it excellent used for salad dressings, sauteing, marinades and vinaigrette, but holds up beautifully for pan-frying and even popping corn! Wonderfully subtle, light and slightly nutty flavor, it won't over-power your food.
There's a nice stand of sugar maples here as well. The family has been harvesting and cooking out maple syrup for over 45 years. The traditional methods are still honored - you won't find any evaporators or reverse-osmosis machines here. The pure sap is cooked out over a wood fire in flat pans. Never pumped or compromised, our syrup is smooth, sweet and delicious. We don't separate syrup grades here; the entire season's worth is blended and contained in 55-gallon drums. The syrup settles out for several weeks and is then decanted off the top & stored in a large walk-in freezer to preserve the flavor and freshness.
You'll find us at the Dane Co Farmers' Market in Madison, WI several Saturdays a month, all year long, as well as the Warrens Cranberry Festival held over the last weekend of September each year in Warrens, WI.
